foodie friday #8


1 nine inch pastry shell
1 (6 serving size) package Vanilla Pudding mix (not instant)
1/4 Teaspoon ground nutmeg
1+1/2 cup canned Bordens Egg Nog
2 tablespoons light rum or 1 teaspoon rum flavoring
2 cups ( 1 pint) whipping cream
additional nutmeg
In medium sauce pan combine pudding mix, ground nutmeg and egg nog.
Mix well.
Over medium heat cook & stir until thickened & bubbly.
Remove from heat, stir in rum.
Cool or chill thoroughly, beat until smooth.
Fold in whipped cream.
Spoon into prepared pastry shell. Garnish with additional nutmeg.
Chill 4 hours. Refrigerate leftovers - (but there wont be any!)

  2. Now that's one low fat, light recipe! Two cups of whipping cream and 1 1/2 cups eggnog... I feel my arteries clogging just reading it. But it looks delicious.

  5. Now eggnog is something I could not get into and it's not available here. What can I say, the universe works in mysterious ways.

    wv: pichi. Too much egg nog makes me pichi, but there's no such thing as too much egg nog pie.

  15. It's never too early to plan for a holiday recipe, is it?
    Since you are speaking of food, I had the most amazing sea bass yesterday! Not only did I call our server over to gush about the perfect piece of fish, I spoke with the manager and then the owner just gushing over this fabulous piece of fish. And to make matters even more interesting, my husband ordered for me! Excellent job all around. Too bad it was a special so I have no idea when, if ever, I will have it again!
